My grandmother was a master of making pancakes. I have never asked her about the recipe, I was very young then. Nevertheless, I managed to recreate this recipe almost 20 year ago.
What is so special in it ? The taste (I know its very subjective thing).
Pancakes are smooth and soft, sweet with crispy edges.
The recipe is very simple, but any modification may spoil the effect.
Here it is:
Note: My cup/glass has a capacity 250ml (1/15 gallon of water)
2 cups of flour
2 eggs
1 cup of milk (3,2% of fat)
1 cup of cold water
6 spoons of sugar
cinnamon
oil for frying
Mix all ingredients thoroughly to obtain a smooth texture. Preheat the frying pan, add a speck of oil (2-3 drops, can not float). Pour cake over the entire surface of the pan (just cover the surface, pancake must be thin). Fry both sides until the golden color on the edges.
You can spread the pancakes with the fried apples or sweet cottage cheese and collapse in roll (or triangles).
